Craft brewery recently opened 10,000 square foot operations at Greenleigh at Crossroads  

Pessin Katz Law, P.A. (PK Law) provided legal representation and guidance to support the opening of the new 10,000 square foot Pooles Island Brewing Company, located at 11695 Crossroads Circle in the Greenleigh at Crossroads mixed-used development near White Marsh in Baltimore County. More than $1 million was invested into the construction and build-out of the facility which expects to employ up to 10 people within the year. Gregory S. “As a start-up operation, we were engaged to establish the legal entity including all documentation, negotiate the building lease and otherwise provide legal counsel to support the creation and opening of Pooles Island Brewing Company,” explained Gregory Weiner of PK Law. “We have extensive experience in the spirits and beer industry, including supporting the legal needs of the Monument City Brewing Company and The Baltimore Whiskey Company in similar capacities. The owners of the brewery are extremely passionate about their craft, bring tremendous enthusiasm and experience to this endeavor and have created a thoughtful execution plan to stand out in the craft brewing culture.”

The brewery features a 15 barrel system and a two barrel pilot system led by Head Brewer, Patrick Jones. Jones, who started his brewing career in 1998 with Big River Grille & Brewing Works in Nashville, has also mastered his craft at Gordon Biersch, Triumph Brewing Co., and Byway Brewing Co. Pooles Island Brewing Company intends to begin with 12 beers, including six of the seasonal variety, with a maximum of 16 manufactured at any given time. The goal is to sell everything they manufacture in-house.

A 3200 square foot tap room will feature an outdoor terrace off the main room and a private area for special events. Food service at the facility is slated to include a rotating selection of popular local food trucks for patrons to enjoy on evenings and weekends. The location backs up to a wooded area, which was chosen to provide privacy and seclusion for the event programming.

“Our goal is to create a brewery that is respectful to the various traditional styles as well as push the limits of the creativity, which includes the development of a beer milkshake,” explained Roger Bedard, General Manager of Pooles Island Brewing Company. “We saw the opportunity to fill a gap in Baltimore County with our craft brewery concept and provide local residents with a fun place to gather and unwind. Our two-barrel system allows us to experiment with small batches and be extremely creative.”
